Tomato & Chilli Jam which is made
using fresh tomatoes and chillies. It is very versatile and can be used for
coating chicken ready for grilling/bbq, sandwiches and it’s great with all
cheeses.
Wholegrain Mustard with Dartford Wobbler Beer. This is
flavoured with some honey and fresh beer from the Minnis Brewing Co. ltd. at
South Darenth. The beer is straight out of the big vats. John has very kindly
given me permission to use the name “Dartford Wobbler” on my label.
Spicy Apple Chutney is cooked using fresh apples but
its flavour is more suited to Indian type food such as curries, rice and
poppadoms.
My jams and marmalades are always ongoing and I do use
fruit grown by local farmers when it is available. I also forage for my own and
people give me some when they have gluts. I have just finished some pear jam and
will be starting on some Quince’s soon. I like to make some different flavours
of jams such as Tomato and Damson jam which sold very well recently. Seeking out
old heirloom varieties of fruit grown for flavour is preferred for quality
rather than quantity so sometimes only small batches are made and may not appear
again.

Organics to use in my marmalades and also candy the peels and sell them in small
bags. My preserving also extends to making fruit syrups, butters, jellies and
fruit cheeses.
